My Story

Joe began his career as a young baker at home baking with cake mixes for family desserts then graduating to scratch baking using the family cook book.  Growing up in suburban Detroit, a career in food wasn’t an option so Joe attended university; graduating with a BS and MS in Chemical Engineering from Michigan State University and Georgia Tech respectively.  Joe worked for a few years as a process engineer for a large paper manufacturer but found true passion while attending weekend baking courses at the French Culinary Institute in New York City.  Inspired by pastry chef instructor Rhona Lauvand, Joe enrolled in their evening culinary program and upon graduation ventured out into the restaurant scene in New York working in bakeries of four star restaurants such as The Lafayette Restaurant and Lespinasse Restaurant.  It was while at Lespinasse that Joe started Joseph Trummer Chocolates, a retail and wholesale chocolate truffle and dessert cup business in NYC.  A write up in the Best Bests Section of New York Magazine brought much appreciated attention to the growing business of providing dessert solutions for luxury hotel banquet and gourmet foods shops in New York and Washington DC.  After several successful years, Joe yearned for a West Coast experience so he pivoted to baking and moved to San Francisco becoming the pastry chef of Campton Place Restaurant and Palio D’Asti earning three start reviews from The San Francisco Chronicle.  As a pastry chef, Joe moonlighted as a consultant for The Center for Culinary Development developing gold standard, innovative food solutions for large blue chip food companies such as Kellogg, Mars, Sara Lee, Burger King and more.  Joe soon combined his technical and culinary degrees to forge a career as a product developer for the Kellogg Company in Battle Creek MI eventually moving on to premier companies such as Sara Lee, Aryzta and most recently Berber Foods.  In 2018, Joe launched Joseph Trummer LLC, a consultancy to assist small and large companies in new product development and technical support.

Joe is a leader in the commercial food industry having worked as a food scientist and director of research and development for companies such as Kellogg, Sara Lee, Aryzta and Berber Foods.  Joe is a professional with extensive experience with concept to commercialization of new product development for clean label, organic and non-gmo baked goods.
